There is a difference between large scale (even if organic) and small scale production - nutrient density and taste. Vegetables grown under sterile soil conditions might look perfect but there will definitely be something missing in the nutrient and the flavor departments. Our vegetables, which are hand tended, have actual contact with the sun's rays and living soil will provide more nutrition and taste like Grandma remembered.

The Seeds
We generally grow only heirloom seeds and save and reuse our own seeds when possible.
Some defining:
Open-pollinated seeds are seeds which are naturally pollinated by insects, animals, wind, or other natural mechanisms. The offspring may show variation. Selecting the traits you desire from the cross and re-breeding them, is how we get things like a small grain that turned into the corn we now enjoy.
Heirloom seeds are seeds from open-pollinated plants that have been saved over time and produce the same plant every time they are planted. They need to be protected from crossing with other similar plants of the same family. Only grow and save seed from one variety of squash or they may cross and you will have say, a zucchini/pumpkin.
Hybrid seeds can be open-pollinated or intentionally crossed and are seeds from two different types of plants that when crossed you get a new stronger, more disease resistant or more productive plant. If you plant the seeds from this cross you generally do not get the same plant or you may get nothing at all, some are sterile. A zucchini and a pumpkin may or may not produce something you like and the seeds from this cross may produce a variety of offspring which may or may not be desirable.
GE (GMO) seeds are seeds from two different species that could not sexually cross without splicing in a lab. Say, corn with a bacteria or in the case of animals, a goat and a spider (done right here at the University of Wyoming).
The world seed market is becoming controlled by fewer and fewer companies. These companies are also major suppliers of fertilizers, herbicides and pesticides.
